Baked cheesy sesame garlic squares

Baked cheesy sesame garlic squares
A crunchy garlicky squares great for pick up snacks  for parties with dips or as side snacks for kids. 
1 kg all purpose flour
1/2 cup warm oil
2 tbsp garlic chili paste
1 cup curd
1 tbsp baking powder 
1/2 tsp chili powder
1/2 cup grated cheese 
1 tbsp sesame seeds
1 tsp ajwain
1 tbsp vinegar
Salt to taste 
Method 
Mix flour with all the ingredients and mix well. 
Add enough hot water to make a medium soft dough.
Keep for 15 mins.
Roll and cut into squares.
Poke with a fork and bake in a preheated oven at 200 deg C.
Bake till brown and golden. 
Store in sealed containers.

Rasgulle ke syrup ki sweet fingers

What do you do when you have syrup from rasgulle and gulab jamuns? I make this besides ther things! Try these baked fingers.
Rasgulla syrup sweet fingers
I love to use every bit that I have in my kitchen. This time it was sugar syrup from rasgulle. Most times we throw it... I use it.
250 ml sugar syrup
1/4 cup oil
1 tbsp poppy seeds
1 tbsp sesame seeds
1/4 cup oats
1/4 cup suji
2 cups atta 
2 tsp baking powder
2-3 tbsp Sugar /acc to taste
Mix syrup with oil , sugar and sesame n poppy seeds. 
Heat and give it a boil.
Cool a bit and then add oats, suji and start adding atta.
Only add as much atta as needed. Make into a firm dough. The dough will be a bit warm, this makes them crunchy.
Keep for 1 hr.
Roll into long think fingers and bake at 180 deg C till golden brown. They will be slightly soft but once they are cool they get crunchy!

Dabeli style turnovers
Sometimes ingredients around you push your creativity to such an extent that you feel pleased that you were short of ingredients. I promised a sick friend done dinner but the buns weren't enough and then my oven was on for baking mini pizzas for kids and there was enough left over dough from them. Enough reasons for me to experiment with potato filling of dabeli,dough and a hot oven ! They turned out delicious !! Next time around will mark the covering with whole wheat flour and make it healthier! :))
Ingredients
For the covering
250 gms flour
50 gms suji
1.5 tsp baking powder
1/2 cup curd
2 tbsp oil
Salt 
For filling
2-3 boiled potato
1 chopped onions
1 chopped tomato
Chilli powder
1/2 tsp haldi
1 tsp coriander powder
1.5 tsp dabeli masala
Salt
1 tbsp oil
For dabeli masala
1 tsp Coriander seeds
1 tsp cumin seeds
Red chille a few
4-5 cloves
Small stick of cinnamon
Other things
Roasted masala peanuts, tamarind chutney, garlic chilli chutney
Method
Mix flour and suji with baking powder , salt and oil. Add curd and water to make a firm dough. Rest for a while.
Roast all the spices for masala and powder them.
Heat oil and add onions and sauté. 
Add tomatoes and sauté to mash.
Add all the spices and cook till you get good aroma.
Add mashed potatoes and cook well. 
Add chopped green coriander and mix well.
Roll small circles from the dough, about 4" round and 2-3 mm thick. 
Spread some garlic chutney and a bit of tamarind chutney.
Put a generous spoon of potatoes on one side.
Top with peanuts and fold over.
Stick the sides with a bit of water and press with a fork.
Put on baking tray lined with parchment paper.
Brush with butter or milk.
Bake in a preheated oven at 200 deg C till they are golden brown.
Serve them hot! 
Yummy delicious tiffin snack!

Baked masala mathris

Masala mathris
I love combining ingredients and play with them always. This was one such trial that worked wonders. 
1 cup flour
1/2 cup suji
1/2 cup oats meal
1/2 cup maida
1/4 cup oil
1 cup grated cheese
1/4 cup crushed peanuts
1 tbsp sesame
1 tbsp flax seeds ground
200 ml curd
1 tsp ajwain
1/2 tsp chilli powder
1 tsp garlic powder
2 tbsp onion chutney , you could use any
1tsp baking powder
Method
Mix all the ingredients into a tight dough. Rest for an hour. 
Roll into a 3 mm thick round and cut into squares.
Bake at 180 deg till golden. 
Yummy !!

Baked pyaaz ki kachoris


One of the yummiest snack I have eaten is pyaaz ki kachoris in Jaipur! Mouthwatering and flavorful and the name is enough to drool over.the only issue was it being fried and so tried my hand at baking them. I worked on the pastry dough and got it as close to the taste of fried stuff such that my son was wondering what's with me ! That's how bad my reputation is with frying. So here is this mouthwatering dish!
Ingredients
4 large onions chopped
3/4 chopped gr chillies
4/5 cloves crushed garlic
1 tbsp chopped ginger
2 tbsp oil
1/2 tsp mustard seeds
1/4 tsp hing 
4 tbsp besan
1 tsp chilli powder
2 tsp dhaniya powder
1/2 tsp haldi
2 tsp amchur
1 tsp crushed saunf
Chopped dhaniya

For pastry
1 cup maida
1/2 cup atta
1/2cup suji
1/4 cup oil
2 tbsp butter
3 tbsp sour curd thick
Salt

Method
In a bowl mix all the flour and salt and add oil and butter . Rub well to get it like bread crumb consistency.
Add curd and cold water to make it into a tight dough.
Keep this aside for good 3/4 hours and then in the fridge for 30 mins.
Meanwhile heat oil and add hing and mustard.
Add garlic , ginger and green chillies.
Add onions and sauté till trancelucent. Today I added spring onion also. 
Add besan and sauté .
Add all the masalas and sauté.
Add green coriander and keep aside.
Make balls with dough and roll into small circles.
Put generous helping of masala.
Cover well and roll to 4 inch rounds.
Put on a baking sheet. Apply some butter and put in a preheated oven at 200 deg till golden brown.
When done, brush with butter again.
Serve hit with green chutney and tamarind chutney.i served with amchur chutney.
Amchur chutney.... 2 tsp amchur with salt, kala namak, bhuna jeera , chilli powder and dhaniya powder , mix with water and boil. Add sugar and reduce. Chutney is ready!

Garlic peanut healthy fingers

My passion and romance with healthy food continues. Baked some mathris but you could fry them too.love the flavor of garlic and crunch of peanuts.
2 cups whole wheat flour
1/2 cup crushed oats
1/2 cup suji
1/2 cup oil
200 ml curd
1/4 cup crushed peanuts 
2 tbsp crushed flax seeds
2 tbsp crushed garlic
2 tbsp grated ginger
1 tsp crushed saunf
1/2 tsp chilli powder
1/2 tsp cumin seeds
2 tsp baking powder
2 tsp salt
Method
Mix all the ingredients into a tight dough, add water if needed.Keep for 30 mins.
Roll and cut into thick fingers.
Brush with buttermilk.
Bake at 150 deg till golden brown.
Enjoy with a yogurt dip or just pig out as they are.
