Baked masala mathris

Masala mathris
I love combining ingredients and play with them always. This was one such trial that worked wonders. 
1 cup flour
1/2 cup suji
1/2 cup oats meal
1/2 cup maida
1/4 cup oil
1 cup grated cheese
1/4 cup crushed peanuts
1 tbsp sesame
1 tbsp flax seeds ground
200 ml curd
1 tsp ajwain
1/2 tsp chilli powder
1 tsp garlic powder
2 tbsp onion chutney , you could use any
1tsp baking powder
Method
Mix all the ingredients into a tight dough. Rest for an hour. 
Roll into a 3 mm thick round and cut into squares.
Bake at 180 deg till golden. 
Yummy !!

Tomato pickle


The South Indian pickles are my favorite and here is one more such recipes from my kitchen.
Ingredients
1 cup Tomato purée/ chopped tomato can
100 gms tomato paste
6-8 green chillies
1/2 pod garlic
2" piece ginger
3 tsp sambhar powder
1 tsp chilli powder
1 tsp methi powder
1 tsp mustard powder
1/2 cup Olive oil
1 tbsp Chana dal
1 tsp urad dal
1 tsp methi seeds
1 tsp mustard
Curry leaves
1/4 tsp hing
Method
Crush ginger , garlic and green chillies. 
Hear oil , add hing, methi and mustard. Let them splutter. Add the dals and let them color.
Add curry leaves and the crushed ginger paste.
Cook for a while.
Add tomato purée and paste and sauté.
Add salt , chilli powder, methi and mustard powder and sambhar masala. Cook till all the water evaporates and oil starts leaving the mixture.
Cool and store.

Flammkuchen

Flammkuchen
This is one of the easiest and yummiest quick recipes I can think of. This comes from Germany and I just loved it. Good thing is it can be used in our kitchen very often and uses everything that our desi kitchen has and one of them being roti ka atta!!! I am sure this would be a great dish for kids lunch boxes and a cocktail snack. You could use any toppings and it looks more like a pizza.
Ingredients
Roti dough a big ball
Sour cream/ cream cheese
Olive oil to spray 
3/4 tbsp grated cheese
1 Onions sliced
1 bowl sliced mushrooms
Use any other vegs or toppings 
Pizza spice
Salt pepper
Method
Roll the dough into a 3 mm thickness like rotis
Spread sour cream or cream cheese
Sprinkle salt and pepper
Sprinkle cheese on it.
Spread the vegs on it and sprinkle salt , pepper and spices.
Spray oil and bake in very hot oven till golden brown and crisp.
Cut into wedges to serve as cocktail snack or for kids lunch box. Delicious !!!!!
